NON-CONFORMING PRACTICES THAT CAN LEAD TO FOOD HAZARDS
The Continent is a 4-star hotel located in Australia. It is a hotel well-known for its restaurant, Peetal. Peetal is a casual dining restaurant that serves a wide variety of Indian cuisines.
You are a kitchen staff in training and recently started at Peetal. You were recently trained on safe food handling. However, you are still adjusting to the actual work. Today, you are tasked to receive the deliveries for the restaurant. Since there were a lot of food ingredients delivered, you lost track of some items.
After four hours, you realise that you forgot to put one of the raw meat supplies in the freezer. As a result, it has thawed at room temperature. Show what you should do in this situation. Include how you will report and resolve the situation according to your job responsibility.
Role Play Activity
Role play the scenario with two volunteers to demonstrate how to report and resolve food hazards caused by non-conforming practices, while demonstrating the practical skills listed in the checklist below.
Perform this activity while being observed by your trainer. If your trainer is not available to directly observe you, you may video record the role play activity and submit the recording to your trainer.
Your role
For this activity, you will take the role of the kitchen staff in training.
The volunteers’ role
For this activity, the volunteers will take the role of:
- Food safety supervisor
- Delivery driver
During the role play activity, learner: |
1. Identifies the non-conforming practices that occurred. The learner must recognise that all deliveries must be promptly stored. |
2. Recognise the food hazard posed by the forgotten item. The learner must indicate that thawed meat is dangerous because it was left at room temperature. |
3. Resolves the problem while acting within his job responsibility. Resolving the problem may include reporting to the supervisor and disposing of the thawed meat. |
4. Demonstrates proper procedure when reporting non-conforming practices. Reporting can be verbal at first, but a written report must follow. The learner’s report must state the non-conforming practice and any corrective measures done. |
