Activity 2: Practical Activity

EXTRACT ESPRESSO FOR SHORT MACCHIATO

Under your trainer’s observation, use the coffee grinder from Chapter 2, Activity 2, to prepare one test extraction. Extract one shot of espresso to be used for a short macchiato.

Follow the steps below:

1. Select the appropriate service-ware for an espresso.

2. Measure one dose of ground coffee.

3. Tamp the ground coffee using a tamper.

4. Conduct one test extraction for one shot of espresso.

5. Examine the quality of espresso by monitoring the following indicators:

  • The cake of ground coffee
  • Colour of its crema
  • Flow texture
  • Water pressure
  • Extraction rate

6. Assess the extraction and determine if it matches your organisation’s standards.
